Pasta Mista with Potatoes

  • 3/4 lb Rummo Pasta Mista N° 74
  • 1 lb potatoes
  • 1 medium carrot
  • 1 onion
  • 1 stalk celery
  • 3-4 slices bacon or pancetta
  • 1/2 cup grated aged pecorino
  • 1/3 cup grated Parmesan
  • Extra virgin olive oil, as needed
  • Salt and pepper, to taste


Dice the carrots, onions and celery. Peel and chop the potatoes into small chunks. Chop the pancetta and sauté in a deep pan. Add the vegetables and continue sautéing. Add the potatoes and cover with water. Cook for 15 minutes. Add the Pasta Mista and cook until done. Remove from heat. Add the grated cheeses and season to taste. Drizzle with olive oil and serve. Buon appetito.
